Sweet, salty, tangy marinade with Asian chili sauce, curry, and garlic, for juicy grilled chicken thighs.
Ingredients:
  • 0.33333334326744 cup soy sauce
  • 0.33333334326744 cup brown sugar
  • 2 tablespoons lime juice
  • 1 tablespoon Thai-style sweet chili sauce
  • 1 teaspoon chile-garlic sauce (such as Sriracha®)
  • 3 cloves garlic, minced
  • 0.25 teaspoon curry powder
  • 4 skinless, boneless chicken thighs
Instructions:
  • Combine soy sauce, brown sugar, lime juice, orange juice, sweet chili sauce, chili-garlic sauce, garlic, and curry powder in a large plastic zipper bag. Seal the bag and massage to mix the ingredients and dissolve the sugar. Add chicken thighs, remove air from the bag, seal, and refrigerate for 4 hours or overnight.
  • Prepare your outdoor grill by preheating it to medium-low heat and gently oiling the grate.
  • Take the chicken out of the bag, transfer the extra marinade into a small saucepan, and bring it to a full boil for about 1 minute to sterilize it.
  • Grill the chicken thighs for about 25 minutes until cooked through and nicely charred, basting generously with the sterilized marinade while grilling.
