Thai-Marinated Chicken Thighs

Irresistible Asian grilled chicken thighs ready in just 30 minutes.
Ingredients:
  • 1/2 cup teriyaki marinade and sauce
  • 2 tablespoons vegetable oil
  • 1 tablespoon chopped gingerroot
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice
  • 2 teaspoons Thai red curry paste
  • 8 boneless skinless chicken thighs
  • 1 package (6 to 8 oz) thick rice stick noodles
  • 1/2 cup chopped dry-roasted peanuts
  • 1/4 cup chopped fresh cilantro
Instructions:
  • Combine teriyaki marinade, oil, gingerroot, fish sauce, lime juice, and curry paste in a medium bowl. Set aside 1/4 cup of the marinade for the noodles.
  • Transfer the leftover marinade into a large resealable plastic bag, then add the chicken. Seal the bag and let it marinate in the refrigerator for at least 10 minutes or up to 2 hours.
  • Preheat your grill over medium-high heat. Cook noodles according to package instructions, then cover to keep warm. Take chicken out of the marinade and discard the marinade. Place chicken on the grill and cook for 8 to 10 minutes, turning once, until the chicken reaches an internal temperature of at least 165°F and the juices run clear when cut through the thickest part.
  • Mix the cooked noodles with the reserved 1/4 cup marinade; transfer to a serving platter or distribute equally among 4 plates. Top with grilled chicken, then garnish with peanuts and cilantro.
