Ingredients:
  • 62.50 ml white vinegar
  • 20.00 gm caster sugar
  • 4.80 gm salt
  • 1 large carrot, cut into matchsticks
  • 150g red cabbage, coarsely shredded
  • 123.75 gm Japanese mayonnaise
  • 20.80 gm hot chilli sauce
  • 1 1/2 tsp finely grated lime rind
  • 2 x 160g pork scotch fillets, halved
  • 40.00 ml plain flour
  • 1 egg
  • 187.50 ml Japanese breadcrumbs
  • 2 green onions, shredded
  • 125.00 ml coarsely chopped coriander
  • 57.50 gm rice bran oil
  • 4 brioche or bread buns, split, toasted
Instructions:
  • In a medium bowl, mix vinegar, sugar, and salt until the sugar dissolves. Divide the mixture evenly into two bowls. Place carrots in one bowl and cabbage in the other. Toss well to coat the vegetables. Allow them to pickle for 40 minutes.
  • In a small bowl, mix together mayonnaise, chili sauce, and zest.
  • Place a pork fillet between two sheets of baking paper. Use a rolling pin to pound the pork until it is 0.5cm thick. Repeat this process with the remaining pork fillets and then season them with salt and pepper.
  • Prepare a station with three shallow plates: one with flour, one with whisked egg, and one with breadcrumbs. Coat the pork first in flour, shaking off any excess, then in the egg, and finally in the breadcrumbs.
  • Separately drain the carrots and cabbage, pressing out any extra liquid. Mix the vegetables, onion, and 1/3 cup of coriander in a fresh bowl.
  • In a large frying pan over medium-high heat, heat oil. Cook pork for 2-3 minutes on each side until golden and fully cooked. Drain on paper towel and then halve each schnitzel.
  • Spread a generous tablespoon of the flavorful mayonnaise mixture onto each piece of bread. Layer with fresh vegetables and crispy schnitzel, then add another dollop of the mayo mixture and a sprinkle of fragrant coriander. Finish with the other piece of bread on top to create a delicious sandwich.
