Summer watermelon salad with radishes, mint, and chili dressing inspired by the vibrant flavors of Los Angeles.
Ingredients:
  • 20 g sesame seeds
  • ½ a watermelon
  • 1 bunch of breakfast radishes
  • ½ a bunch of fresh mint (15g)
  • 1 lime optional
  • ½ a clove of garlic
  • 5cm piece of ginger
  • 1-2 fresh red chillies
  • 2 limes
  • 1 tablespoon low-salt soy sauce
  • 1 tablespoon sesame oil
Instructions:
  • Toast the sesame seeds in a hot dry pan over medium-high heat until golden and fragrant. Remove from heat and set aside. For the dressing, peel the garlic and ginger, deseed the chili, then finely grate them into a clean jam jar. Add lime juice, soy sauce, and oil. Close the lid and shake well. Cut the watermelon into 1cm chunks. Slice the radishes and mint leaves. Combine watermelon and radishes in a bowl, pour over the dressing, add sliced mint, and toss gently. Top with toasted sesame seeds and baby mint leaves. Serve with lime wedges on the side.
