Delicious asparagus, tomato, and goat cheese salad with tangy vinaigrette - perfect side for any meat dish.
Ingredients:
  • 0.25 cup balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • 1 teaspoon minced garlic
  • 1 pound fresh asparagus, cut into 2-inch pieces
  • 1 cup grape tomatoes, halved
  • 2 ounces goat cheese, cubed
Instructions:
  • In a small saucepan over medium-high heat, let the balsamic vinegar come to a lively boil. Allow it to simmer for 3 minutes. Remove from heat and vigorously whisk in the olive oil, Dijon mustard, honey, garlic, salt, and pepper. Keep the dressing aside for later use.
  • Boil water in a pot and blanch asparagus for 3 minutes. Drain in a colander, rinse with cold water, and pat dry.
  • In a large bowl, mix together asparagus and grape tomatoes. Drizzle dressing on top and toss well until everything is coated. Gently fold in goat cheese and serve fresh.
