Avocado and sesame rice ball bento box

Try these delicious avocado and sesame rice ball bento box to upgrade your kid's lunch game!
Ingredients:
  • 100.00 gm sushi rice
  • 10.00 gm sushi seasoning
  • 1/2 small avocado, cut into 1cm pieces
  • 1.50 gm sesame seeds, toasted
  • 31.50 gm salt-reduced soy sauce
  • 30.00 ml mirin
  • 15.00 gm caster sugar
  • 1/2 tsp sesame oil
  • 2 hard-boiled eggs, halved
Instructions:
  • Rinse the rice thoroughly in water three times. Combine the rice with 1/2 cup water in a saucepan over medium heat. Cover and bring to a boil, then lower heat to a simmer for 12 minutes until water is absorbed. Remove from heat and let it sit covered for 10 minutes. Transfer the rice to a dish, fluff it up using a spatula, and gently mix in seasoning until cooled.
  • With moistened hands, scoop out a rounded tablespoon of rice and shape it into 6 balls, pressing firmly. Indent each ball with your finger, place a piece of avocado inside, then cover the avocado with more rice, shaping it into a ball. Arrange the rice balls on a plate and sprinkle with sesame seeds.
  • Mix soy sauce, mirin, sugar, and oil in a jug until sugar dissolves. Divide the mixture into 2 small airtight containers, seal with lids, and refrigerate with rice balls and egg in bento boxes until ready to enjoy.
