Gourmet egg and avocado sandwich with Swiss and Cheddar cheeses on toast. Decadent and delightful!
Ingredients:
  • 2 large eggs
  • salt and ground black pepper to taste
  • 1 tablespoon butter, softened
  • 2 slices Italian bread
  • 1 ounce Swiss cheese, sliced
  • 1 ounce Cheddar cheese, sliced
  • 0.5 ripe avocado, sliced
Instructions:
  • In a skillet over medium heat, warm olive oil. Add eggs and cook for 1 to 2 minutes. Flip and continue cooking for an additional 2 to 5 minutes until done. Plate the eggs and season with salt and pepper.
  • Butter one side of each bread slice generously.
  • Preheat a skillet over medium heat. Place buttered bread slices in the skillet. Layer Swiss cheese, 1 fried egg, Cheddar cheese, another fried egg, avocado, and the remaining bread slice, buttered side up. Flip sandwich and grill until golden brown, 3 to 4 minutes.
  • Transfer the sandwich from the skillet and carefully slice it in half.
