Avocado toast topped with a perfectly poached egg - a delicious and filling breakfast for one using mini avocados.
Ingredients:
  • 1 small shallot, thinly sliced into rings
  • 1 tablespoon red wine vinegar
  • salt to taste
  • 1 small avocado, pitted and peeled
  • 0.25 lime, juiced
  • 1 egg
  • 1 tablespoon white vinegar
  • freshly ground black pepper to taste
  • 1 slice whole-grain crusty bread
  • 1 pinch Aleppo pepper, to taste
Instructions:
  • In a bowl, mix together shallot, red wine vinegar, and a pinch of salt; let it sit. In another bowl, crush avocado with lime juice and salt.
  • Boil water in a shallow saucepan, then add vinegar and lower heat to a simmer. Gently slide egg from a ramekin into the water. Poach until white is set and yolk is slightly runny, about 3 to 4 minutes. Remove with a slotted spoon onto a paper towel-lined plate and season with salt and pepper.
  • Toast the bread to your desired level of crispiness, then transfer it to a plate. Spread mashed avocado on top, add a portion of pickled shallot, and place the poached egg on top. Finish with a sprinkle of aleppo pepper and serve right away.
