Grill bacon-topped burgers for a quick and delicious meal.
Ingredients:
  • 1 large ripe avocado, chopped
  • 1/2 small lime, juiced
  • 350g shortcut bacon rashers
  • 4 Turkish bread rolls, split
  • 1 baby cos lettuce, trimmed, leaves separated
Instructions:
  • In a bowl, combine avocado with 1 tablespoon lime juice. Season with salt and pepper, then mash with a fork. Cover with plastic wrap.
  • Heat up a greased barbecue plate over medium-high heat. Cook the bacon for 2 minutes on each side until it's just crisp. Then, move the bacon to a plate with paper towel. Crack the eggs onto the barbecue plate and cook for 2 minutes for a soft yolk or until they are cooked to your preference.
  • Crisp up Turkish bread rolls by toasting or grilling them. Place the bases on serving plates, spread with mashed avocado, then top with lettuce, egg, and bacon. Season with pepper, cover with the roll tops, and serve.
