Bacon, feta, basil, and tomato stuffed chicken: a burst of delicious flavors in every bite.
Ingredients:
  • 8 slices bacon
  • 0.5 cup crumbled feta
  • 8 skinless, boneless chicken breast halves
  • 4 (14.5 ounce) cans diced tomatoes
  • 2 tablespoons chopped fresh basil
Instructions:
  • Cook the bacon in a large, deep skillet over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon on a paper towel-lined plate, let cool, then crumble into small pieces.
  • Combine crispy bacon with tangy feta in a small bowl.
  • Make a 2 to 3 inch slit lengthwise in the chicken breast to form a pocket, then stuff with the mixture and seal with toothpicks.
  • Add tomatoes and basil to the slow cooker with the chicken.
  • Cook the chicken on High heat until it is fully cooked through, approximately three hours.
