Ingredients:
  • 0.75 pound bacon, cut into 1 inch pieces
  • 1 cup crumbled feta cheese
  • 3 tablespoons sour cream
  • 0.125 tablespoon dried oregano
  • 0.125 teaspoon ground black pepper
  • 3 (4 ounce) skinless, boneless chicken breast halves
  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup dry bread crumbs
  • 4 potatoes, peeled and cubed
  • 1 sweet onion (such as Vidalia®), chopped
  • 2 tablespoons butter
Instructions:
  • Preheat your oven to 350°F (175°C).
  • In a large, deep skillet over medium-high heat, cook the bacon until evenly browned yet still soft, for 5 to 7 minutes. Keep the bacon grease in the skillet. Cool the bacon slices on a paper towel-lined plate. Once cooled, combine with feta cheese, 3 tablespoons of sour cream, oregano, and black pepper in a small bowl. Set aside.
  • Place a chicken breast on your work surface and carefully cut a 2-inch pocket in it using a sharp knife. Repeat with the remaining chicken breasts. Fill the pockets with the bacon mixture. Coat the chicken breasts in flour, egg, and bread crumbs in that order.
  • Heat the bacon grease over medium heat until sizzling. Sear the chicken breasts on both sides in the flavorful fat for 2 minutes per side. Keep the bacon-infused grease in the pan. Transfer the seared chicken breasts to a baking dish and bake in the preheated oven until cooked through and the filling is heated, about 20 to 25 minutes. Confirm the chicken is fully cooked by checking with an instant-read thermometer - it should register at least 165 degrees F (74 degrees C) in the center.
  • Place potatoes in a large pot with salted water. Boil over high heat, then simmer covered on medium-low until tender, about 20 minutes. Drain potatoes.
  • Once the potatoes are boiling, sauté the onion in the bacon grease until very tender and golden brown for about 10 minutes. Mash the cooked potatoes with the sautéed onion, butter, and remaining 3 tablespoons of sour cream. Serve the chicken breasts with the creamy mashed potatoes.
