Bacon-wrapped beef with white bean and goat's cheese salad

Modernize steak and vegetables in a flavorful dish.
Ingredients:
  • 4 rindless bacon rashers
  • 4 (about 600g) beef fillet steaks
  • 1 small red onion, halved, thinly sliced
  • 1 x 420g can cannellini beans, drained, rinsed
  • 5 (about 210g) marinated artichoke hearts, quartered
  • 80g (1/2 cup) pitted kalamata olives
  • 65g goat's cheese, crumbled
  • 125.00 ml fresh basil leaves
Instructions:
  • Secure 1 rasher of bacon around each steak piece using toothpicks.
  • Heat a large non-stick frying pan over medium-high heat. Cook the beef for 3 minutes on each side for medium doneness or until it reaches your desired level of doneness. Transfer to a plate, cover with foil, and let it rest for 5 minutes.
  • Heat the oil in a pan over medium heat. Sauté the onion for 2 minutes until soft. Then add the beans, artichoke, and olives and cook for 1 minute until heated through.
  • Plate the onion mixture evenly among the serving plates. Sprinkle generously with goat's cheese and fresh basil leaves. Finish by topping each plate with the beef before serving.
