Bacon-Wrapped Chicken Stuffed with Spinach and Ricotta

Impress with bacon-wrapped chicken, stuffed with ricotta and spinach. Eye-catching dish!
Ingredients:
  • 2 tablespoons extra-virgin olive oil
  • 2 teaspoons minced garlic
  • 1 (10 ounce) bag washed fresh spinach
  • 4 skinless, boneless chicken breast halves
  • 0.5 (15 ounce) container ricotta cheese
  • 0.66666668653488 cup grated Parmesan cheese
  • 0.5 teaspoon garlic salt
  • 0.5 teaspoon onion powder
  • 2 teaspoons Italian seasoning
  • salt and pepper to taste
  • 8 slices thick sliced bacon
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and lightly grease a 9x13 inch baking dish with oil.
  • In a large skillet over medium-high heat, sizzle garlic in olive oil until aromatic and slightly browned, around 30 seconds. Add spinach and sauté until wilted. Transfer to a bowl and let cool.
  • Butterfly the chicken breast, creating a pocket, then sandwich each breast between plastic wrap and gently pound to 1/4 inch thickness.
  • Combine ricotta cheese, Parmesan cheese, Italian seasoning, garlic salt, and onion powder with cooked spinach until well mixed. Stuff each chicken breast with the mixture, rolling them up like a burrito and securing with toothpicks. Season with salt, pepper, and more Italian seasoning. Wrap each breast with 2 strips of bacon. Transfer to a baking dish to cook.
  • Roast in a preheated oven until the bacon is golden and crunchy, and the chicken is cooked through, for 45 to 60 minutes. Rest for 5 to 10 minutes before removing toothpicks and serving.
