Baked Apples with Sweet Potato Stuffing

Delicious baked apples filled with sweet potato, pineapple, pecans, and marshmallows.
Ingredients:
  • 6 baking apples - peeled and cored
  • 0.5 cup cinnamon red hot candies
  • 1 cup water
  • 1 (29 ounce) can sweet potatoes, drained
  • 0.33333298563957 cup packed brown sugar
  • 0.5 cup crushed pineapple, drained
  • 0.25 cup chopped pecans
  • 6 large marshmallows
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C).
  • In a large pot over medium heat, melt the candies in water until fully dissolved.
  • Add the apples to the pan and baste them regularly until they start to soften. Remove the pan from the heat and let it cool.
  • Combine the sweet potatoes, brown sugar, pineapple, and pecans in a bowl.
  • Fill the cooled apples with the sweet potato mixture, then generously heap any extra on top of the apples.
  • Transfer the mixture to a 4-quart casserole dish and bake for 20 minutes. Top each apple with a marshmallow and bake until marshmallows are golden brown.
