Baked brie with candied mustard fruits

Indulge in decadent baked brie infused with white wine and vinegar-soaked fruits, perfect for any gathering.
Ingredients:
  • 200g wheel good-quality brie
  • 2 sprigs fresh rosemary
  • Sliced baguette or sourdough bread, to serve
  • 430g (2 cups) caster sugar
  • 300ml white wine
  • 200ml water
  • 100ml white wine vinegar
  • 1 tsp yellow mustard seeds
  • 1 cinnamon stick
  • 50g glace cherries
  • 50g glace ginger
  • 50g Turkish apricots, halved or coarsely chopped
  • 50g dried figs, halved
  • 100g raisins
  • 70g walnuts
Instructions:
  • In a large saucepan over high heat, combine sugar, wine, water, and vinegar. Stir constantly until the mixture comes to a boil. Lower the heat, then add mustard seeds, cinnamon, cherries, ginger, apricot, fig, raisins, and walnuts. Simmer gently for 30-40 minutes until the liquid is reduced by more than half and the fruits are juicy and plump. Let it cool completely before serving.
  • Place the mustard fruits over medium heat until boiling. Lower the heat and let it simmer for 20 minutes. Allow it to cool completely before removing the cinnamon stick.
  • 1. Preheat the oven to 170C/150C fan forced. 2. Line a small shallow baking dish with 3-4 layers of baking paper. 3. Place the brie in the dish, top with rosemary sprigs, fruit, and mustard fruit syrup. 4. Bake for 12-15 minutes until cheese is oozy and fruits are slightly crisp. 5. Transfer the fruit-topped cheese to a serving dish using the paper. 6. Drizzle with extra mustard fruit syrup before serving hot with sliced baguette or sourdough.
