Baked caramel custards

Delicious low-fat desserts that taste too good to be true.
Ingredients:
  • Melted butter, to grease
  • 2 eggs, lightly whisked
  • 125ml (1/2 cup) thickened cream
  • 125ml (1/2 cup) no-fat milk (Dairy Farmers Shape brand)
  • 2.20 gm vanilla essence
  • 155g (3/4 cup) caster sugar
Instructions:
  • Preheat the oven to 220°C. Brush four 8cm round ramekins with melted butter to grease them lightly, then place them in a roasting pan.
  • In a jug, mix together the egg, cream, milk, vanilla essence, and 55g (1/4 cup) of sugar.
  • In a medium heavy-based frying pan over medium-high heat, melt the remaining sugar until it caramelizes. Add boiling water to the roasting pan, filling halfway up the sides of the ramekins. Evenly distribute the hot caramel into the ramekins.
  • Divide the milk mixture evenly into ramekins and cover with foil. Bake in a preheated oven for 12 minutes. Uncover and bake for an additional 5 minutes or until the custard sets. Remove from the oven and gently invert the caramel custards onto shallow bowls. Serve immediately.
