"Baked corn medley with cream cheese, butter, spicy chiles, and crispy fried onions."
Ingredients:
  • 1 teaspoon vegetable oil
  • 0.5 cup chopped onion
  • 0.25 cup butter, softened
  • 2 (3 ounce) packages cream cheese, softened
  • 1 (15.25 ounce) can whole kernel corn, drained
  • 1 (15.25 ounce) can creamed corn
  • 1 (4 ounce) can chopped green chile peppers
  • 1 (2.8 ounce) package French-fried onions, divided
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously grease an 8x8 inch baking dish.
  • In a small skillet over medium heat, cook the onion in oil until it turns translucent.
  • Combine the butter and cream cheese in a large bowl, then mix in the whole kernel corn, creamed corn, chile peppers, and onions. Transfer the mixture to the prepared dish.
  • After baking for 15 minutes in a preheated oven, stir in half of the fried onions, then sprinkle the remaining onions on top. Bake for an additional 15 minutes.
