Surprise Mom on Mother's Day with a delicious low FODMAP breakfast.
Ingredients:
  • 100g leg ham
  • 150g baby spinach
  • 40.00 ml finely grated parmesan cheese
  • 4 eggs
  • 4 slices bread, toasted, buttered, to serve (see notes for Low FODMAP substitution)
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced. Lightly grease four 3/4 cup-capacity ovenproof dishes and elegantly layer each with 2 slices of ham on the base and sides.
  • Place fresh spinach in a microwave-safe bowl and microwave on high for 1 minute 30 seconds or until wilted. Then, transfer the spinach to a sieve and press down with a spoon to drain excess liquid.
  • Evenly distribute the spinach among the prepared dishes. Sprinkle each serving with 2 teaspoons of parmesan cheese.
  • Carefully crack 1 egg into each dish, season with salt and pepper, and arrange on a baking tray. Bake for 16 to 18 minutes until the egg white is perfectly set. Remove from oven, let rest for 2 minutes, and serve with toast.
