Spicy baked chicken fajitas - a speedy weeknight delight!
Ingredients:
  • 1 tablespoon cornstarch
  • 2 teaspoons chili powder
  • 1 teaspoon paprika
  • 1 teaspoon white sugar
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon ground cumin
  • 1 pound skinless, boneless chicken breasts, thinly sliced
  • 2 red bell peppers, thinly sliced
  • 1 large onion, thinly sliced
  • 12 corn tortillas
Instructions:
  • Preheat your oven to a toasty 425 degrees F (220 degrees C).
  • Combine cornstarch, chili powder, paprika, sugar, salt, onion powder, garlic powder, and cumin in a bowl and mix well.
  • Mix together chicken, red bell peppers, and onion in a bowl. Add the cornstarch mixture and mix well to coat everything evenly. Transfer the mixture to a baking dish.
  • Cook the chicken in the preheated oven for approximately 30 minutes until fully cooked. Serve the chicken mixture in corn tortillas.
