Indulgent baked mac and cheese with a crispy golden breadcrumb topping, a family favorite comfort dish.
Ingredients:
  • 0.5 pound elbow macaroni
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1 tablespoon mustard powder
  • 3 cups milk
  • 0.5 cup minced yellow onion
  • 0.5 teaspoon paprika
  • 1 bay leaf
  • 12 ounces shredded sharp Cheddar cheese, divided
  • 1 teaspoon kosher salt
  • freshly ground black pepper
  • 1 cup panko bread crumbs
  • 3 tablespoons butter, melted
Instructions:
  • Preheat oven to 350°F (175°C) for the perfect bake.
  • 1. Boil a large pot of salted water. Cook elbow macaroni until al dente, about 8 minutes. Drain well.
  • In a pot over medium heat, melt 3 tablespoons of butter until smooth. Whisk in flour and mustard powder for about 5 minutes. Stir in milk, onion, paprika, and bay leaf. Bring to a boil, then simmer on medium heat until the sauce thickens, about 10 minutes. Remove the bay leaf before serving.
  • In a bowl, whisk together 2 tablespoons of sauce and egg to temper the egg. Pour the egg mixture into the sauce and gently stir. Add and melt 3/4 of the Cheddar cheese into the sauce for 2 to 3 minutes until smooth; season with salt and pepper. Fold in the macaroni, transfer to a 2-quart casserole dish, and top with the remaining cheese.
  • Combine panko bread crumbs with 3 tablespoons of melted butter in a bowl and then sprinkle over the cheese layer.
  • Bake in the oven until the cheese is gooey and the topping is golden brown, approximately 30 minutes.
