"Easy and healthy foil-baked salmon with flavorful seasoning of onions, lemon, marjoram, and star anise."
Ingredients:
  • olive oil
  • 2 medium onions, halved and sliced
  • 1 teaspoon dried marjoram
  • salt and freshly ground black pepper to taste
  • 2 lemons, sliced
  • 5 pods whole star anise pods
  • 0.33333334326744 cup water
  • aluminum foil
  • 1 (1 1/2-pound) salmon fillet
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C).
  • In a skillet over medium heat, sauté onions in olive oil until soft and caramelized for about 10 minutes. Season with marjoram and a hint of salt. Remove from heat.
  • In a hot skillet, quickly brown lemon slices on both sides until lightly golden, approximately 3 minutes. Add star anise and water to the skillet. Bring to a boil, then remove from heat.
  • Line a baking pan with aluminum foil, leaving overhang on all sides. Arrange onions in a single layer, then place salmon fillet on top, skin-side down. Season with salt and pepper, top with lemon slices and star anise. Fold foil over the salmon, sealing edges to create a packet.
  • Roast the salmon in the preheated oven until it easily flakes with a fork, for about 35 to 40 minutes. Unwrap the foil carefully, then serve.
