Herb and citrus-crusted salmon baked to perfection in a flavorful foil packet.
Ingredients:
  • 0.5 cup olive oil
  • 5 cloves cloves garlic, minced or pressed through a garlic press
  • 2.5 tablespoons fresh lemon juice, or more to taste
  • 1 tablespoon brown sugar
  • salt and freshly ground black pepper to taste
  • aluminum foil
  • 1 teaspoon olive oil
  • 1 (3 pound) salmon fillet
  • 0.25 cup chopped fresh parsley
  • 1 lemon, sliced
Instructions:
  • Heat the oven to 375°F (190°C).
  • In a bowl, mix together 1/2 cup of olive oil, minced garlic, fresh lemon juice, brown sugar, fragrant oregano, savory thyme, and a pinch of salt and pepper.
  • Lay a large piece of aluminum foil on a baking sheet and coat it with 1 teaspoon of olive oil. Put the salmon, skin-side down, in the center of the foil and generously drizzle with the olive oil mixture.
  • Create a snug foil packet around the salmon by folding and sealing the edges securely.
  • Cook the fish in the preheated oven until it easily flakes with a fork, for 20 to 25 minutes. Top with fresh parsley and lemon slices for a vibrant finish.
