Baked salt & vinegar potato crisps and thyme kumara crisps

Elevate your potato chips with a gourmet twist of salt, vinegar, and thyme by Katie Quinn Davies.
Ingredients:
  • 1 large desiree potato, scrubbed, thinly sliced (using a mandoline)
  • 1 large kumara (sweet potato), scrubbed, thinly sliced (using a mandoline)
  • 40.00 ml malt vinegar
  • Olive oil spray
  • 3 thyme sprigs, leaves picked
Instructions:
  • Preheat your oven to 180C and line 2 large baking trays with baking paper.
  • Lay out the potato slices neatly on a baking tray. Drizzle with vinegar, mist with olive oil, and generously sprinkle with crushed sea salt flakes.
  • Arrange the kumara slices on the empty tray, drizzle with a touch of olive oil, and generously sprinkle with crushed sea salt flakes, freshly ground black pepper, and fragrant thyme leaves.
  • Bake for 35 minutes, turning and rotating trays halfway through until crisp and golden. Serve hot.
