Cajun-seasoned fish sandwiches topped with sauteed onions, capers, and tomatoes for bold and flavorful meal.
Ingredients:
  • 4 (4 ounce) tilapia fillets
  • 2 tablespoons olive oil, divided, or as needed
  • 0.5 teaspoon Cajun seasoning, or to taste
  • 2 medium onions, thinly sliced
  • 1 (14.5 ounce) can diced tomatoes, drained
  • 2 tablespoons capers
  • 4 submarine sandwich rolls, split
Instructions:
  • Preheat your oven to 400°F (200°C) to ensure the perfect cooking temperature.
  • Lightly coat the tilapia with a drizzle of 1 tablespoon of olive oil, then generously sprinkle with Cajun seasoning. Season both sides with salt and pepper before placing it on a baking sheet.
  • Cook the fish in the preheated oven until it easily flakes with a fork, approximately 15 minutes.
  • Cook onions in olive oil until tender, then season with salt and pepper. Add tomatoes and capers, cook until heated through.
  • Top rolls with fish and a flavorful medley of onions, tomatoes, and capers.
