Irresistible banana bread baked oatmeal bars, a satisfying twist on a classic breakfast muffin.
Ingredients:
  • 0.5 cup unsweetened applesauce
  • 0.5 cup white sugar
  • 3 cups old-fashioned oats
  • 1.25 cups 2% milk
  • 2 large eggs, beaten
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 over-ripe banana, mashed
  • 2 teaspoons packed brown sugar
  • 0.5 teaspoon ground cinnamon
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and lightly grease an 8-inch square baking dish.
  • In a bowl, combine applesauce and white sugar until creamy. Mix in oats, milk, eggs, baking powder, and salt until well combined. Gently fold in the banana. Transfer the batter into the prepared baking dish.
  • Combine brown sugar and cinnamon in a small bowl, then generously sprinkle over the banana batter.
  • Bake in the warm oven until set, for 30 to 35 minutes. Let it cool for 5 minutes before cutting into bars.
