Chef John's Banana Bread Pancakes: A delicious fusion of banana bread and pancakes.
Ingredients:
  • 1.25 cups all-purpose flour
  • 0.5 teaspoon kosher salt
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon baking soda
  • 1 large ripe banana
  • 1 large egg
  • 0.33333334326744 cup white sugar
  • 0.25 cup milk
  • 0.25 teaspoon vanilla extract
  • 0.25 cup unsalted butter, melted
  • 0.5 cup finely chopped walnuts
  • 1 tablespoon unsalted butter, or as needed
Instructions:
  • Whisk together flour, salt, baking powder, and baking soda in a small bowl. Set aside for later use.
  • In a mixing bowl, transform the banana into a velvety paste using a potato masher. Blend in the egg and sugar until the sugar dissolves and the mixture turns smooth and creamy, which should take about 2 minutes. Incorporate the milk, vanilla extract, 1/4 cup melted butter, walnuts, and flour mixture until just combined.
  • Allow the batter to sit and relax for 10 minutes.
  • In a large nonstick pan over medium-high heat, melt 1 tablespoon of butter. Pour in approximately 1/3 cup of batter for each pancake once the pan is hot. Lower the heat to medium and cook for about 3 minutes until edges appear dry and small air bubbles form on the surface. Flip the pancakes and cook for an additional 3 minutes until golden brown. Serve promptly.
