Fluffy banana walnut pancakes with warm spices, a taste of banana bread for a delightful breakfast or brunch.
Ingredients:
  • 1 cup all-purpose flour
  • 0.25 cup finely chopped walnuts
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon baking soda
  • 1 cup almond milk
  • 2 small overripe bananas, mashed
  • 1.5 tablespoons butter, melted
  • 0.5 teaspoon vanilla extract
  • 1 large egg
Instructions:
  • In a large bowl, combine flour, walnuts, sugar, baking powder, nutmeg, cinnamon, baking soda, and salt. Create a well in the center and set aside.
  • Combine almond milk, bananas, melted butter, and vanilla in a separate bowl, whisking until smooth. Then mix in the egg. Pour this mixture into the center of the flour mixture and gently stir until just combined.
  • Preheat a lightly greased skillet over medium-high heat. Pour 1/4 cup of batter into the skillet, gently tilt to distribute evenly. Cook until bubbles form on top and edges are set, about 3-4 minutes. Flip and cook until golden brown, about 1-2 minutes. Repeat with the rest of the batter.
