Banana fritters with caramel sauce

Banana fritters coated in a crunchy, golden batter.
Ingredients:
  • 185ml buttermilk
  • Large pinch ground cinnamon
  • 30g breadcrumbs
  • 30g desiccated coconut
  • 4 ripe lady finger bananas, peeled
  • 160g caster sugar
  • 80ml cream
  • 250ml vegetable oil
  • Vanilla ice cream, to serve
Instructions:
  • Mix the buttermilk and cinnamon until fully incorporated. In another shallow bowl, combine the breadcrumbs and coconut.
  • Coat a banana generously in buttermilk, then thoroughly cover with the breadcrumb mixture. Place on a plate or tray. Repeat with the rest of the bananas. Chill until ready to serve.
  • Combine sugar and 1/3 cup (80ml) water in a saucepan over low heat, stirring until the sugar dissolves. Let it simmer for 8 minutes until golden. Then, lower the heat and gently whisk in the cream until well combined.
  • In a 22cm frying pan over medium heat, warm the vegetable oil. Cook the bananas, turning occasionally, until golden for 2-3 minutes. Then, transfer them to a plate lined with a paper towel. Reheat the caramel sauce if needed, and serve the fritters with ice cream and caramel sauce.
