Delicious banana fritters paired with creamy vanilla ice cream.
Ingredients:
  • 90g (1 cup) fresh breadcrumbs, made from day-old bread
  • 32.00 gm brown sugar
  • 3.75 gm ground cinnamon
  • 4 bananas, peeled
  • 20g (1 tbsp) butter
  • 9.20 gm vegetable oil
  • Vanilla ice-cream, to serve
Instructions:
  • Preheat your oven to 180°C.
  • On a large plate, mix breadcrumbs, sugar, and cinnamon. Slice the bananas in half lengthwise, then coat them with the breadcrumb mixture, pressing gently to ensure even coverage.
  • In a large heavy-based frying pan, melt half of the butter and oil over medium-low heat. Cook 4 banana pieces for 3-4 minutes on each side until golden brown. Transfer to a baking tray and keep warm in the preheated oven. Repeat with the rest of the butter, oil, and bananas. Serve the banana pieces on plates with ice-cream immediately.
