One-bowl banana fritters topped with confectioners' sugar, perfect for a delicious breakfast or brunch.
Ingredients:
  • 2 bananas, mashed
  • 0.5 cup milk
  • 3 teaspoons baking powder
  • 2 eggs, beaten
  • 1 tablespoon margarine, melted
  • 1 quart vegetable oil for frying
  • 0.5 cup confectioners' sugar, or as needed
Instructions:
  • In a large mixing bowl, mix bananas and milk together. Sift in flour, baking powder, and salt. Add eggs and margarine, then mix thoroughly until well combined.
  • Heat oil to 365 degrees F (180 degrees C) in a large, deep skillet until hot.
  • Drop spoonfuls of the fritter mixture into the hot oil and cook until golden brown, about 5 minutes, flipping once. Drain on a paper towel-lined plate.
  • Sprinkle fritters with powdered sugar and enjoy while they're warm.
