Banana fritters with green tea ice-cream

Indulge in green tea ice cream paired with crispy golden banana fritters for a delicious and exotic treat.
Ingredients:
  • 150g plain flour
  • 32.50 gm cornflour
  • 1 egg
  • Vegetable oil, to deep fry
  • 4 bananas
  • Icing sugar, to dust
  • 75g caster sugar
  • 2 tsp powdered green gunpowder tea*
  • 250ml thickened cream
  • 250ml cream
Instructions:
  • In a saucepan, combine sugar and 1/3 cup of cold water over low heat until sugar dissolves. Let it simmer for 2 minutes, then remove from heat. Combine 1 tablespoon of syrup with the tea, then add to the saucepan with the syrup mixture. Allow it to cool completely.
  • Whip the thickened cream until stiff peaks form. Gently fold in the thin cream and tea syrup. Transfer the mixture into a shallow container and freeze until just frozen around the edges. Remove from the freezer and beat with an electric mixer until smooth. Return the mixture to the container and freeze again. Repeat this step 2 or 3 times. Alternatively, you can use an ice-cream maker according to the manufacturer's instructions.
  • Sift together 1/2 cup plain flour and cornflour into a bowl. Add a pinch of salt, the egg, and 1/2 cup cold water. Use a hand whisk to create a smooth batter, then set it aside.
  • Fill a deep-fryer or large heavy-based saucepan halfway with oil and heat to 190°C. To test the oil's temperature without a thermometer, fry a cube of bread - it should turn golden in 30 seconds if the oil is ready. Peel bananas, cut them in half widthwise, and coat them with the remaining flour. Dip each banana piece in batter, then gently place them in the hot oil in batches. Fry until golden brown (approximately 1-2 minutes), flipping halfway through cooking. Sprinkle with icing sugar and serve hot with ice cream.
