Banana honey loaf

Start your day right with a delicious banana and honey loaf.
Ingredients:
  • 100g butter, chopped
  • 117.98 gm honey
  • 300.00 gm wholemeal self-raising flour
  • 250.00 ml plain flour
  • 2.50 gm bicarbonate of soda
  • 4.00 gm baking powder
  • 3.75 gm ground cinnamon
  • Pinch salt
  • 90.00 gm firmly-packed brown sugar
  • 257.50 gm milk
  • 2 ripe bananas, peeled, mashed
Instructions:
  • Preheat your oven to 180°C. Line a loaf pan measuring 10.5cm x 20.5cm at the base and 7cm deep with baking paper, leaving a 2cm overhang on both long ends for easy removal later on.
  • Melt butter and honey together in a microwave-safe bowl on MEDIUM (50%) power for 1 to 2 minutes.
  • In a large bowl, sift together the flours, bicarbonate of soda, baking powder, cinnamon, and salt. Add in the sugar and stir to combine, making sure to include any husks left in the sieve for added flavor.
  • In a large jug, mix together the milk, egg, and banana until well combined. Add the banana mixture and honey mixture to the dry ingredients, then gently stir with a metal spoon until just combined.
  • Transfer the mixture into the prepared pan and bake for 60 to 70 minutes, or until a skewer inserted into the center comes out clean. Allow the loaf to cool in the pan for 10 minutes before transferring it onto a wire rack to cool completely. Finally, slice and serve.
