Dairy-free banana loaf is a perfect tea-time treat straight from the oven.
Ingredients:
  • 2 ripe bananas, mashed
  • 62.50 ml apple puree/sauce
  • 161.25 gm caster sugar
  • 2 eggs, lightly beaten
  • 249.00 gm self-raising flour, sifted
Instructions:
  • Preheat your oven to 190°C and prepare a 10.5 x 21cm loaf pan by greasing and lining it.
  • In a large bowl, mix ripe bananas, apple puree, sugar, and eggs until well combined. Gently fold in the flour until just combined.
  • Transfer the mixture into the greased loaf pan. Bake for 1 hour or until a toothpick inserted into the center comes out clean.
