Banana Pudding with Ladyfingers

Banana pudding with layers of ladyfingers, creamy custard, and orange-infused bananas - a truly special treat!
Ingredients:
  • 3 cups milk
  • 4 large eggs
  • 4 large egg yolks
  • 0.66666668653488 cup white sugar
  • 0.25 teaspoon salt
  • 3 tablespoons unsalted butter
  • 1.25 teaspoons vanilla extract
  • 0.25 teaspoon almond extract
  • 5 large ripe bananas
  • 2 tablespoons orange juice
  • 3 (3 ounce) packages ladyfingers
Instructions:
  • In a medium saucepan over low heat, gently mix together the milk, eggs, and egg yolks until smooth. Heat until warm to the touch without boiling, about 3 to 4 minutes. Remove from heat.
  • 1. In a double boiler over simmering water, combine sugar and salt. 2. Gradually pour in the milk mixture while stirring constantly. 3. Cook and stir for 8 to 10 minutes until the mixture is smooth and thick like heavy cream. 4. Add butter, vanilla, and almond extract, and stir until the butter melts completely.
  • Pass the custard mixture through a sieve into a large bowl. Cover the surface directly with plastic wrap and chill in the refrigerator until completely cool, approximately 2 hours.
  • Cut bananas into thick slices, then toss them in a bowl with a refreshing splash of orange juice.
  • Layer half of the ladyfingers at the bottom of a trifle bowl. Top with half of the banana slices and pour half of the cooled custard over them. Repeat the layers once more. Cover and refrigerate for 1 hour before serving.
