Banana-Cinnamon Cake

Transform ripe bananas into a decadent cake drizzled with cream cheese glaze.
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ Yellow Cake Mix
  • 1/2 cup water
  • 1 cup mashed very ripe bananas (2 medium)
  • 1/2 cup butter or margarine, softened
  • 2 teaspoons ground cinnamon
  • 3 eggs
  • 1/2 cup chopped walnuts
  • 1/2 cup Betty Crocker™ Rich & Creamy cream cheese frosting
  • 2 to 3 teaspoons milk
  • 1/4 teaspoon ground cinnamon
Instructions:
  • Preheat the oven to 350°F (or 325°F for a dark or nonstick pan) and grease and lightly flour a 12-cup fluted tube cake pan, or spray with cooking spray.
  • In a large bowl, use an electric mixer to blend cake mix, water, bananas, butter, cinnamon, and eggs on low speed for 30 seconds, then switch to medium speed for 2 minutes, scraping the bowl occasionally. Mix in walnuts and pour into pan.
  • Bake for 47 to 57 minutes until a toothpick inserted in the center comes out clean. Let it cool in the pan for 10 minutes, then turn the pan upside down onto a cooling rack or heatproof serving plate to remove it. Allow the cake to cool completely for about 2 hours. In a small bowl, mix the glaze ingredients until thin enough to drizzle, and then drizzle it over the cake. Store loosely covered after.
