Indulge in irresistible banana-toffee mini cakes - a dozen treats that pack a flavorful punch in each bite.
Ingredients:
  • 2 cups Original Bisquick™ mix
  • 1/3 cup granulated sugar
  • 1 cup mashed ripe bananas (about 2 medium)
  • 2/3 cup milk
  • 1 egg, slightly beaten
  • 1/2 teaspoon ground allspice
  • 1/2 cup Gold Medal™ all-purpose flour
  • 1/2 cup packed brown sugar
  • 1/4 cup cold butter
  • 2 tablespoons peanut butter
  • 1/2 cup white vanilla baking chips
  • 2 tablespoons whipping cream
Instructions:
  • Preheat oven to 400°F and generously coat a 12-cup muffin tin with cooking spray.
  • Combine coffee cake ingredients in a medium bowl using a whisk or spoon until well blended, then distribute the batter among the muffin cups.
  • Combine flour and brown sugar in a small bowl. Use a pastry blender or fork to mix in butter and peanut butter until the mixture resembles small peas. Sprinkle the topping evenly over the batter.
  • Bake for 17 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool for 10 minutes, then delicately run a knife around the edge of the cups and transfer to a cooling rack.
  • Microwave baking chips and whipping cream in a small microwavable bowl on High for 30 to 60 seconds until melted. Stir until smooth. Drizzle glaze over cakes on a cooling rack lined with waxed paper using a fork. Serve warm.
