Barbecue Beef Cheese Melts

Delicious and quick 30-minute hot sandwich.
Ingredients:
  • 2 cups Original Bisquick™ mix
  • 1/2 teaspoon ground mustard
  • 1 cup milk
  • 1 egg, beaten
  • 1 teaspoon vegetable oil
  • 1/2 cup chopped green bell pepper
  • 1/4 cup chopped onion
  • 1 cup barbecue sauce
  • 3/4 lb cooked roast beef (from deli), chopped
  • 2 cups shredded Cheddar cheese (8 oz)
Instructions:
  • Preheat your oven to 350°F and generously spray a 13x9-inch pan with cooking spray. In a large bowl, combine Bisquick mix, mustard, milk, and egg until well blended. Transfer the mixture to the pan and spread it evenly.
  • Bake for 15 to 17 minutes, or until a toothpick inserted in the center comes out clean. The top will remain a lovely golden hue.
  • In a 10-inch nonstick skillet over medium heat, sauté bell pepper and onion in oil for 3 to 4 minutes until crisp-tender. Add barbecue sauce and beef, then cook until heated through.
  • Evenly distribute the seasoned beef mixture over the baked bread base, then generously sprinkle with cheese.
  • Continue baking for an additional 4 to 5 minutes until the cheese is perfectly melted. Then, slice into squares.
