BBQ chicken and potatoes - a delicious meal ready in just 30 minutes!
Ingredients:
  • 1 pouch (4.7 oz) Betty Crocker™ creamy butter or roasted garlic mashed potatoes
  • Water, milk and butter called for on potatoes pouch
  • 1 tablespoon butter
  • 1 cup shredded carrots
  • 6 green onions, sliced, greens and whites separated
  • 3 cups shredded cooked chicken
  • 1 cup barbecue sauce
  • 1/2 cup shredded sharp Cheddar cheese (2 oz)
Instructions:
  • Prepare the potatoes according to the stovetop directions on the pouch. Once cooked, cover and keep warm.
  • In a 10-inch nonstick skillet over medium-high heat, melt 1 tablespoon of butter. Sauté carrots and green onion whites for 2 to 3 minutes until softened. Stir in chicken and barbecue sauce, cook until hot for another 2 to 3 minutes. Remove from heat.
  • Cover the mixture in the skillet with a generous layer of potatoes, spreading them evenly. Sprinkle with a generous amount of cheese and cover to let it melt for 3 to 5 minutes. Finish by topping it with fresh green onion greens.
