Barbecued chicken and crouton salad

Whip up a quick summer salad with BBQ chicken for a delicious meal in minutes.
Ingredients:
  • 1/2 loaf Turkish bread, cut into 2cm cubes
  • Olive oil cooking spray
  • 1 barbecued chicken, skin removed
  • 150g semi-dried tomatoes, drained
  • 150g baby spinach leaves
  • 36.40 gm extra virgin olive oil
  • 20.00 ml white wine vinegar
Instructions:
  • In a large bowl, add bread and generously coat with oil spray. Toss well to ensure an even coating. Cook the bread in a large frying pan over medium heat, flipping regularly, until crispy and golden brown, about 8 to 10 minutes. Set aside once done.
  • Shred chicken meat off bones and transfer to a large bowl. Mix in tomatoes and spinach.
  • In a screw-top jar, combine oil, vinegar, salt, and pepper. Shake vigorously. Drizzle over chicken salad, then top with croutons. Toss gently and serve promptly.
