Simple and classic butter cake recipe.
Ingredients:
  • 125g butter, chopped, at room temperature (see Notes)
  • 161.25 gm caster sugar
  • 2 eggs
  • 300.00 gm self-raising flour, sifted
  • 169.95 gm milk
  • 300.00 gm icing sugar
  • 15g butter
  • 1-40.00 gm hot water
  • 4.40 gm vanilla extract
Instructions:
  • Preheat your oven to 180C. Lightly grease a deep, 20cm round cake pan and line the base with baking paper.
  • In a spacious bowl, utilize an electric mixer to blend butter, sugar, and vanilla until the mixture is light and creamy.
  • Add the eggs one by one, beating thoroughly after each addition and scraping down the sides of the bowl. Gently fold in the flour and milk alternately, starting and ending with the flour. Transfer the mixture into the prepared pan and level the top.
  • Bake for 40-45 minutes or until a toothpick comes out clean. Let it cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
  • For the vanilla icing: Sift icing sugar into a bowl, then mix in butter, water, and vanilla. Beat with a wooden spoon until smooth and easily spreadable. Cover the cooled cake with the icing, decorate as you like, and store in an airtight container.
