Learn choux pastry for delicious eclairs, profiteroles, and croquembouche!
Ingredients:
  • 60g butter, chopped
  • 165.00 ml plain flour
  • 3 eggs, lightly beaten
Instructions:
  • In a saucepan over medium heat, melt butter in 2/3 cup of cold water. Cook until butter is melted and mixture just begins to boil, about 3 to 4 minutes.
  • *Lower the heat to a gentle simmer and gently incorporate the flour. Cook, stirring continuously, for 2 to 3 minutes until the mixture pulls away from the edges of the pan to form a cohesive ball. Let it sit for 5 minutes to cool slightly.*
  • Set aside 2 teaspoons of egg. Using a wooden spoon, slowly incorporate the rest of the egg until fully blended and the mixture becomes a shiny dough (it should easily fall from the spoon).
