Blend for smooth, crispy, golden crepes.
Ingredients:
  • 150g plain flour
  • 5.00 gm caster sugar
  • 240ml milk
  • 2 eggs
Instructions:
  • Add ingredients to a food processor or blender along with a pinch of salt.
  • After blending until smooth, pour the mixture through a strainer into a jug. Cover and let it rest for 30 minutes at room temperature.
  • Take a paper towel and dip it in melted butter, then use it to brush the base of a 16cm non-stick crepe pan over medium heat. Once the pan is hot, pour in a sufficient amount of batter to cover the base. Tilt the pan to ensure the batter spreads out thinly, pouring any extra back into the jug. Cook the crepe for approximately 1 minute until the underside turns golden, then flip it using a metal spatula. Cook the other side for just under a minute until golden.
  • Transfer the crepe to a plate and cover with foil to keep warm. Continue making crepes and stacking them on the plate.
