BBQ sausage rolls with balsamic onions

Elevate summer with Curtis Stone's BBQ sausage rolls with balsamic onions and capsicums.
Ingredients:
  • 6 Butcher thin beef sausages, sliced into 2 inch pieces
  • 2 medium brown onions, cut into slices
  • 40.00 ml balsamic vinegar
  • 2 cloves garlic, finely chopped
  • 2 capsicums (1 red, 1 green), cut into medium slices
  • 4 White Long Rolls
  • 8.85 gm Dijon mustard
  • 200g Tasty Shredded Cheddar Cheese
Instructions:
  • On the BBQ over medium heat, sizzle 1 tablespoon of olive oil and place sausages. Grill until golden brown, flip once. Take them off the BBQ and slice diagonally for a tasteful presentation.
  • - Preheat a large frypan over medium heat and pour in the remaining oil. - Sauté onions until lightly browned and soft, then stir in balsamic vinegar and cook until liquid is gone. - Add garlic and capsicum, cook for 5-7 minutes until softened. - Season to taste and mix in the sausages.
  • Cut each roll in half lengthwise, then spread 1/4 teaspoon of mustard on one half of each roll. Fill the rolls with cheese and place them under the preheated grill for a few minutes until the cheese is melted and the rolls are slightly toasted.
  • Take out the rolls from the oven and stuff each one generously with the flavorful sausage and onion mixture. Slice them in half and present them beautifully for serving.
