Bean and basil salad

Refreshing summer salad with low GI.
Ingredients:
  • 27.30 gm olive oil
  • 200g green beans, trimmed
  • 200g butter beans, trimmed
  • 1 large red capsicum, thinly sliced
  • 420g can four bean mix, drained, rinsed
  • 62.50 ml small fresh basil leaves
Instructions:
  • In a large frying pan over medium-high heat, heat 2 teaspoons of oil. Add green beans, butter beans, and capsicum and cook until softened, about 2 to 3 minutes. Stir in the four bean mix and heat through for an additional minute. Remove from heat and serve.
  • Gently sprinkle basil leaves over the dish. Season generously with salt and pepper. Drizzle with the remaining oil. Mix everything together until well combined. Serve and enjoy!
