Bean bundles with creamy chive sauce

Bean bundles with zesty basil pesto.
Ingredients:
  • 350g green beans, trimmed
  • 6 slices prosciutto
  • 15.00 gm basil pesto
  • 40.00 ml chopped fresh chives
  • 252.50 gm pure cream
Instructions:
  • 1. Bring a large pot of water to a boil over high heat. Cook beans for 3 minutes until vibrant green and tender. Drain and plunge into a bowl of ice water. Pat dry with paper towels.
  • Divide the beans into 6 portions of about 10 beans each. Lay out a slice of prosciutto. Spread it with 1/2 teaspoon of pesto. Put one portion of beans at one end of the prosciutto. Roll up the beans in the prosciutto. Repeat with the rest of the prosciutto, pesto, and bean portions.
  • Preheat a large non-stick pan over medium-high heat. Cook bean bundles for 2 minutes per side until prosciutto is crispy. Transfer to a dish and cover to retain warmth.
  • Lower the heat to medium and introduce garlic and chives to the pan. Sauté while stirring for 1 minute until aromatic. Pour in the cream and simmer for 2 to 3 minutes until slightly thickened. Season with pepper, then drizzle the sauce over the bean bundles before serving.
