Tender beef strips in savory tomato sauce over penne and broccoli noodles. Perfect for kids!
Ingredients:
  • 1 (8 ounce) package penne pasta
  • 3 cups broccoli florets
  • 12 ounces boneless beef chuck, partially frozen
  • 1 tablespoon olive oil
  • 1 onion, cut into 1/2-inch slices
  • 2 cloves garlic, minced
  • 1 tablespoon all-purpose flour
  • 0.25 teaspoon ground black pepper
  • 1 (14 ounce) can beef broth
  • 0.25 cup tomato paste
  • 1 teaspoon Dijon mustard
Instructions:
  • 1. Boil a pot of lightly salted water. Add penne and cook for 8 minutes, stirring occasionally. 2. Add broccoli and cook for an additional 3 minutes until penne is tender. 3. Drain and keep warm.
  • Prepare the beef by trimming off excess fat and slicing it into thin, bite-sized strips.
  • In a large skillet over medium heat, sauté beef, onion, and garlic until onion is tender and beef is browned, approximately 5 minutes. Remove from heat and mix in flour, salt, and black pepper.
  • Place the skillet back on the heat and combine beef broth, tomato paste, and Dijon mustard. Stir and cook until the mixture thickens and bubbles, about 5 to 8 minutes. Let it cook for an additional minute, then remove from heat.
  • Distribute the penne and broccoli evenly among 4 bowls, then generously top each with the flavorful beef mixture.
