Beef and broccolini noodle stir-fry

Effortless stir fry perfect for a weeknight dinner.
Ingredients:
  • 400g fresh egg noodles
  • 80ml soy sauce
  • 80ml oyster sauce
  • 41.60 gm tomato sauce (ketchup)
  • 2 garlic cloves, crushed
  • 20.00 ml grated ginger
  • 40.00 ml rice vinegar
  • 2 bunches broccolini, ends trimmed
  • 20.00 ml sesame oil
  • 400g lean beef mince
  • 4 spring onions, sliced on an angle, plus extra to garnish
  • Sesame seeds, to sprinkle
Instructions:
  • Place the noodles in a bowl of boiling water for 5 minutes to soften, then drain.
  • Combine the sauces with garlic, ginger, and vinegar in a bowl.
  • Blanch broccolini in boiling salted water for 2-3 minutes until vibrant green and slightly crisp. Drain and set aside.
  • Heat oil in a wok over medium-high heat. Cook beef for 2-3 minutes until browned. Add noodles, sauce, broccolini, and onion, stir for 1 minute to heat through. Serve in bowls topped with sesame seeds and spring onion.
