Savor these elegant roast beef roll-ups for a perfect picnic under the sun.
Ingredients:
  • 250g truss cherry tomatoes
  • 123.75 gm mayonnaise
  • 2 tsp horseradish cream or mustard, optional
  • 40.00 ml finely chopped chives
  • 1 loaf sourdough baguette, cut into 6 sections, split
  • 500g sliced roast beef
  • 270g jar chargrilled capsicum, drained
  • 80g baby rocket leaves
Instructions:
  • Begin by preheating your oven to 180C. Next, place the tomatoes on an oven tray and generously drizzle them with flavorful olive oil.
  • Roast until tomatoes start to soften and collapse, about 10 minutes.
  • Take it off the heat and let it cool. Mix together the mayonnaise, horseradish or mustard (if preferred), and chives in a small bowl. Spread the mixture on half of the bread slices.
  • Layer the beef slices, capsicum, and rocket on top. Secure the sandwiches with kitchen string and finish with the roasted cherry tomatoes on top.
