Flavorful beef teriyaki noodle bowls with a sake-infused marinade, quick and delicious.
Ingredients:
  • 2.5 teaspoons white sugar, divided
  • 0.25 cup low-sodium soy sauce
  • 2 tablespoons low-sodium soy sauce
  • 0.25 cup sake
  • 2 tablespoons sake
  • 0.5 teaspoon ginger paste
  • 1 pound beef, sliced
  • 14 ounces egg noodles
  • 0.25 cup water
  • 2 teaspoons water
  • 1 teaspoon cornstarch
  • 2 tablespoons avocado oil
Instructions:
  • In a zip-top bag, mix together garlic, sugar, soy sauce, sake, and ginger paste. Set aside 1/4 cup of the sauce. Add beef to the bag with the remaining sauce and marinate for 30 minutes.
  • Bring a big pot of lightly salted water to a rolling boil. Cook egg noodles until al dente, 7 to 9 minutes. Drain and set aside.
  • Pour the remaining marinade mixture into a saucepan along with the remaining sugar and 1/4 cup water. Bring to a boil over medium-high heat. In a separate bowl, mix the cornstarch with the remaining water. Remove the saucepan from the heat and stir in the cornstarch mixture. Return to heat and simmer until the sauce thickens. Keep warm on low heat.
  • In a large skillet or wok over medium-high heat, warm avocado oil. Add beef and stir-fry for 1 minute. Reduce heat to medium and cook for about 5 more minutes until meat is fully cooked and no longer pink. Pour in warmed sauce and mix well to combine.
  • Combine noodles and savory beef mixture in a delightful bowl. Serve promptly for optimal enjoyment.
