Beer butt chicken

Exciting twist on classic British cooking: Beer-steamed chicken for juicy, flavorful results. Perfect for both barbecue and oven methods.
Ingredients:
  • 1 x 1.5 kg whole free-range chicken
  • 1 x 473 ml can of lager
  • 1 heaped teaspoon fennel seeds
  • 1 teaspoon cumin seeds
  • 1 teaspoon smoked paprika
  • 1 teaspoon brown sugar
  • 1 teaspoon mild chilli powder
  • olive oil
Instructions:
  • Preheat the barbecue or oven to 200°C/400°F/gas 6. Remove the chicken from the fridge. Crush fennel and cumin seeds in a pestle and mortar. Mix with paprika, brown sugar, chilli powder, salt, pepper, and 3 tablespoons of oil to make a paste. Rub the mixture all over the chicken. Open a beer, take a few sips, then place the chicken on top of the can. Cook for 1 hour 10 minutes to 1 hour 30 minutes until fully cooked. Rest the chicken, covered, before serving with grilled vegetables, salad, or bread. Enjoy the delicious flavors!
